Camu Camu: The Essential recipes

Hello everyone, as promised find various recipes that I have compiled to help you integrate the Camu Camu in your kitchen and fill up with vitamin C!

1-The Lemon Cheesecake and Camu Camu powder:

INGREDIENTS (for 6 people)

For the bottom of the cheesecake:

  • 150 GR Coconut chips
  • 5 dates in small pieces
  • 120 ml almond milk
  • 1 tablespoon of water

For the cream:

  • 220 gr of Cashews, soak 2 hrs in water or overnight
  • 50 ml coconut oil
  • 1 lemon zest and juice
  • 50 ml of honey
  • 1 tablespoon of Camu Camu

The Deco Trim:

  • Dried orange peel
  • Slice of lemon
  • Lemon zest

Instructions:

Prepare the base by combining all the dry base ingredients in a food processor until they are friable. Add water, a little at a time, until a sticky paste is obtained. Press the base evenly into a 22 cm silicone cake pan. Refrigerate while you are filling.

In a high-speed mixer, mix cashew nuts with coconut oil and lemon juice until smooth. It can take up to five minutes, scratching the sides as you go along. Once smooth, add the honey, zest and Camu powder, stirring again for 30 seconds until the whole is well mixed.

Pour the filling on the base and freeze for two hours. Once the preparation is complete, remove and let go back to room temperature, then garnish with extra lemon zest, a slice of lemon and dried orange peel.

2-Vegan Banana avocado Camu Camu Pudding:

Ingredients (for 2 persons)

  • 2 Well ripe bananas
  • 1 Big Lawyer
  • 1 tablespoon of Camu Camu
  • 1 Spoon of cocoa chips
  • Banana Powder
  • husked Hemp Seeds

Instructions:

Put all the ingredients of the pudding except the spoon of cocoa chips in a food processor or a mixer at high speed and mix until smooth.
Pour into bowls or glasses and garnish with cocoa chips, banana powder, husked hemp seeds or other optional toppings of your choice.
Let put in the refrigerator or serve immediately.

3-Seeds of Chia porridge and Camu Camu:

If you stick to the basic recipe below, you can then add milk or powder fruit, purée, seeds or nuts to make it to your liking…

Ingredients:

  • 1/3 Cup of Chia seeds
  • 2 cups of filtered water or choice walnut milk
  • This makes a ratio of 6:1 that gives you a good gel. Mix it up and let it rest for up to 30 minutes.
  • I leave mine in the fridge in a jar for breakfast or a snack for the next few days. Then you can complete with fruit or add more milk or nuts and seeds to make a complete meal.
  • As a substitute for an egg, the ratio is as follows: for 1 egg, 1 tablespoon of chia seeds for 3 spoons of water.

4-Berry Physalis Smoothie:

Oh, we love this superfood smoothie. Fantastic is just filled with nutritional benefits that will give you such a boost to your day, you will wonder how you could do without it!

Ingredients:

  • 3 tablespoons of Physalis (Golden berries)
  • 2 tablespoons Acai powder
  • 1 tablespoon powder of Camu Camu
  • 3 tablespoons Goji berries
  • 1 banana
  • A handful of red fruits
  • 1 Pot of Yogurt
  • 1 jar of Cranberries juice
  • A little water

Instructions:

The first step is to soak the Golden berries for a while. They are dried to be kept, so just water them a little to help them mix. Once the berries are tender, everything is terribly simple.

Chuck it all together in a blender, including the water in which the berries are soaked, and mix it up to get a nice smooth consistency.

5-Cupcakes with lemon and Camu Camu:

Ingredients (16 pieces):

  • 1 Orange (120g)
  • 1 lemon (100g)
  • 2 ½ C. To s powder of Camu Camu
  • 180 gr of coconut chips
  • 240 Sunflower Seeds
  • 2 c. to s turmeric powder
  • 2 c. to S coconut oil
  • 1 c. to S Honey
  • 1 c. to S vanilla pod

Instructions:

Add all the ingredients to your Thermomix bowl or food processor.
Taste the mixture and adjust the softness if necessary.
Press the mixture into a uniformly doubled container.
Place it in the refrigerator or freezer until it hardens.
When it’s ready, cut into squares and enjoy.

6-Camu Camu (Vitamin C) cake at the “Carrot cake”

Loaded with Camu Camu (vitamin C), this cake is surprisingly tasty and contains no carrots. It has the same texture and taste and uses instead Camu Camu (vitamin C). With or without the decadent icing. This cake gives your immune system a super boost in vitamin C.

Snack
Preparation time: 10 minutes
Cooking time: 1 hour 15 minutes
For 13 people.

Ingredients:

  • 360 gr of flour
  • 4 C. To s powder of Camu Camu
  • 2 c. to D bicarbonate
  • 4 eggs
  • 1 c. to S of salt
  • 1 c. to S of cinnamon
  • 240 gr of red sugar
  • 370 ml vegetable oil
  • 135 GR of Apple chips
  • 100 gr of nuts in pieces

Icing

  • 100 g fresh Cream
  • 60 g butter Ointment
  • 120 gr of stevia sugar 
  • 1/2 lemon juice
  • 2 c. To S of lemon zest

Instructions:

Preheat oven to 160 degrees.
Mix the dry ingredients, then slowly add the other ingredients according to the recipe above.
Pour into a 26 cm round mould.
Bake about 1 1/4 hours or until the fork comes out clean.
When the cake has cooled, ice it.
Decorate with berries, nuts or dried fruit.
Icing:
Add all the ingredients together and mix well. When the cake is cold-ice.

7-Antioxidant Boost smoothie

This smoothie bowl is delicious and powerful to help you clean your body. Loaded with an incredible flavor of berries, it’s a bowl of energy you’ll love!

Ingredients:

  • 1 Glass of frozen strawberries
  • 1 Frozen Banana
  • 1 small carrot
  • 1 teaspoon of Camu Camu powder
  • 1-1 1/2 glass of almond milk or soy or rice etc…

Instructions:

Mix all ingredients in a blender and mix until smooth.
Add more milk if you prefer a finer consistency.
Divide between the bowls and garnish with choice pads.

8-Energy bars with powder of Camu Camu and Maca:

Nibbling if done properly and in moderation can actually help you stay healthy instead of earning extra pounds. It is a very simple flapjack recipe with some healthy ingredients, such as maca powder, Camu-Camu powder, oats, dried figs and dates. You can also use dried nuts such as almonds, cashews and Brazil nuts, etc. These bars will ensure you stay in shape all day long.

Preparation time: 10 minutes
Cooking time: 15 minutes

Effort: Medium

Portions: 10-12 Bars

Ingredients:

  • 225 gr of oats
  • 2 tablespoons of maca powder
  • 3 tablespoons of gold syrup
  • 50 gr of butter
  • 1 tablespoon powder of Camu Camu
  • 75 GR of sugar
  • Dried figs to taste
  • Dried Dates to taste
  • Dried currant to taste

Instructions:

In a medium saucepan, melt butter over medium-low heat.
Add the sugar and stir using a wooden spoon until the sugar is completely dissolved.
Add the golden syrup and mix well.
Stir for about 5 to 8 minutes or until mixture becomes lightly caramelized.
Add Camu Camu powder and Maca powder and mix well to dissolve.
Add the oat flakes and stir continuously.
At this point, lower the heater to a minimum. It can be easily burned if you are not careful enough.
Add dried dates, currants and mix well.
Transfer to a tray and use a spoon to evenly distribute the mixture.
Let it cool slightly but not completely before you can cut into squares.
Serve cold or at room temperature.

9-Ice lollipop sorbet Camu Camu and Mango:

Ingredients:

  • 2 cups Camu Camu juice
  • 1Jus of 1/2 Lemon
  • Sugar to taste
  • 1 cup of mango goat’s milk yogurt

Instructions:

Rinse the Camu Camu and place it in a container. Add boiling water and let stand for 20 minutes until it cools.
Crush the berries by hand to extract as much dough as possible and remove the seeds. Mix in a blender with lemon juice and sugar to taste. Keep it in the refrigerator.
Prepare 8 mussels and popsicle sticks.
Pour a little camu camu juice into each mold and place in the refrigerator. When firm, add the same amount of yogurt and cool again. Before hardening completely, insert a popsicle stick in the center.
Repeat the operation to form layers with the juice and yogurt. Leave them in the freezer overnight or a few days even if I doubt they will last as long, they are delicious!
To Unmold, place the mussels in warm water and press them to loosen the chips. Serve immediately.

10-spicy bars with lemon and Camu-Camu:

Spicy bars with lemon and Camu-Camu with a pecan date crust: pure Powa! We have intentionally kept the softness low, but if you want them sweeter, simply add more honey syrup and maple. Ingredients:

Ingredients:

Bar background:

  • 1 cup pecan brissures or pecan butter
  • 1 1/2 Cup of Medjool, pitted dates
  • 1 cup oat puree
  • Honey or maple syrup at your convenience
  • 1 vanilla pod or vanilla sugar sachet,
  • Pinch of sea salt

Top layer:

  • 1 cup cashew butter
  • Honey or maple syrup at your convenience
  • 2 tablespoons ‘ coconut oil
  • 1 tbsp pure vanilla powder
  • 1 tbsp powder of Camu-Camu
  • 1-2 lemons, Juice (or ~ 3 T)
  • 2 spoonfuls of freshly sliced ginger
  • A little water or nut milk (almond, hazelnut is) to mix until frozen consistency (dilute a little)

Instructions:

Mix all the ingredients of the crust. Squeeze the whole thing into a baking dish. Put it in the freezer. In a bain-marie, melt the coconut oil. Place the top layer, including melted coconut oil and use it to frost the crust! Add the Goji berry hearts.  Let it sit in the freezer for at least 2 hours, cut it into slices and spread the love!
